Maury Rubin created The City Bakery, a bakery that won the hearts of New Yorkers and became a destination for bakery lovers around the world. City Bakery modernized the neighborhood bakery for a changing food world: locally sourced ingredients, a fixation on fresh over frozen, a design-minded destination and a spirit of indulgent pleasure. Maury made world class pastries from classic Viennoiserie to cookies, tarts and cakes, alongside a savory menu of salads and sandwiches that reset the template of what bakeries offer. Maury created a world-changing hot chocolate as well, updating the drink into a rich and luxurious new experience, and making City Bakery a must-visit for chocolate lovers around the world.
From 1990 to 2018, Maury designed and built nearly twenty bakeries, including Birdbath Neighborhood Green Bakery, a concept predicated on the question "How to operate an environmentally friendly bakery in a big city?"
Maury expanded City Bakery to Japan, where the brand became a popular destination from Tokyo to Osaka to Kyoto. Over time and continents, Maury's food and drinks have been served to more than 10 million people.
Beyond the kitchen, Maury's design work was fundamental to his bakeries. He was the ghost graphic designer and art director of City Bakery, designing signage, postcards and menus, including posters for the City Bakery Annual Hot Chocolate Festival. Maury designed the iconic blue and white City Bakery cup, a familiar sight on the streets of lower Manhattan for twenty years. Maury designed, art directed and illustrated his 1996 cookbook: Book of Tarts, Form, Function and Flavor at The City Bakery, which won the IACP Cookbook Design of the Year award. And Maury's design and use of eco-friendly materials for Birdbath Green Bakery was featured in the American Institute of Architect's 2007 Exhibition 'Inside/Out," alongside the work of renowned architects Frank Gehry, Robert A.M. Stern and Jean Nouvel. Maury was the only non-architect featured in that AIA exhibition.
